No specifics but my take is: you'll need to add the required sensors yourself then hook them up to an MCU (e.g. RPi Pico or Pico2) which would then make the data available over bluetooth or WiFi.

All the avalable over the counter bluetooth devices require OBDII and just ask the ECU. But, as you almost certainly know, your car won't have either of those.
