I think I found the answer in the article that Milliways linked.
When I edited the ipv4 configuration, using nmtui, I had not changed the configuration to Manual, but had left it as Automatic. Making that change, and then re-booting, seems to have got me to the one IP address (the ..191 address I had initially tried to fix to).
So... I think everything is good
