seems like just missing the icon theme
gnome being a standard, try
sudo apt install gnome-icon-theme
Although it's not just icons missing (but also checkboxes), I had a burst of hope for a second with your suggestion but ... no...
On my test RPI5 with RaspiOS, installing gnome-icon-theme package makes no difference at all

I installed it on my Trixie Wayfire build, which also has Gnome installed, and it works fine, so the missing Gnome icon theme dependency would seem to be the problem.
So if I get it right, it's not raspiOS you're using on your Pi but real Debian Trixie for arm64, right ?

I forgot to mention it, but OBS interface is perfect on my RPI5 with RaspiOS with Wayland and KDE Plasma
I also tried OBS with a x86_64 Debian Trixie with Wayland and KDE (gnome not installed) and it's all good
So it's only RaspiOS PiXeL which needs something. But what ?

Here's a screencap of OBS on a RPI5 with RaspiOS Wayland and KDE Plasma. The interface has all icons, symbols, checkboxes and all, it's perfect
