So based on the thought that it might be hardware, not software related, I pulled out a microHDMI to HDMI adapter and an HDMI cable that I know works, and tried using those. I tried it in both ports on the Pi, but it didn't seem to detect anything different, and kept displaying at that same resolution. I even tried one cable plugged into the monitor and the Pi while the other cable was just plugged into the Pi... just to see if that did anything - unfortunately it didn't.It sounds like you have a dodgy cable or adapter which isn't allowing the Pi to read the EDID from the display.

There's the error of the checksum being 0x79 when it should be 0x8b.
I've done that quick hack, and converted it back to binary (xxd -r -ps hexdump.txt > binary.bin). That's attached to this post.
Even after a reboot, and tried the adapter/cable combo in both ports again, no change. At this point I'm begining to think I may just... have a bad Pi ¯\_(ツ)_/¯ (or bad prots on the Pi) it would suck if I did because I'm well outside my return window (I've had this thing pushing a year and a half now - this is what I get for not using it for nearly a year).
I'm guessing, if the Pi actually got the info from the monitor, that it would adjust the screen resolution (or at least give me the option in settings), but nothing. If I'm missing something in the reboot process I'm happy to give it another go!
As for the file you attached, I very my appreciate you doing that... but I genuinely have no idea what to do with it. I get that it's to replace the bum info that the Pi has, but I have no idea where to find that info to replace it nor where I should put the file you uploaded on my Pi in order to attempt to fix the problem. Sorry if that makes me sound like an idiot or something, but despite using Linux daily.... I do my best not to screw around in the file system to avoid messing things up.
And I probably sound like a broken record at this point, but I'm seriously grateful for your help and your patience with trying to help me on this!
