RPi Pico 1 (and 2), is a castellated module that allows soldering direct to carrier boards (and also connection wires).
Even if you have soldered pins you can also solder a connection wire on the side of the pin, or even to the top of the pin.
You can even solder a set of 90 degree connectors to the side.

The easy way to solder some but not all pins, is to push the two full rows of pins into a breadboard, place the Pico on the pins, and only solder the used pins. Afterwards pull the unused pins out with pliers - you can heat the pin slightly to make this easier. If you then also remove the plastic pin carrier for the unused pins you can put connecting wire or 90 degree connectors also from the underside of the Pico.
If you have a Pico with all pins soldered and you want to remove some, heat the unwanted pin from the Pico's top whilst pulling on the pin with pliers. You will need three hands or a clamp for the Pico, to do this.
