I always look through the list before pressing y, partly to see if it needs a reboot or not. I notice a lot of people use -y as an argument, that is way too scary for me.(1) sounds like a time saving plan, but if you do not do a apt list --upgradable (to see a list) you have already put your neck into the guillotine and the blade is on the way down.
(2) I could not see a graphics way to change the system, but found it with the "Terminal" sudo raspi-config
No idea why GUI and CLI variants of raspi-config have different abilities, I always use the CLI version to avoid disappointment, yes its a bit clunky but that brings back good memories of computing a few decades ago.
