FreeRTOS, like any RTOS, is a means of task switching. I don't think this runs anything "in parallel".

Please correct me if I'm wrong about that.

But you have two real hardware core processors that can run different tasks in parallel.
Whether FreeRTOS facilitates that, IDK. It would be failing to use a major strength of the RP2xxx if it did not.
