That shouldn't be the problem. The Picoprobe (whether retail, standard Pico, or home-made PCB) provides a CMSIS-DAP USB interfiace to the host, and OpenOCD doesn't know or care how the Picoprobe is wired up (nor even if it is a Picoprobe vs another proprietary CMSIS-DAP device).Problem is that while OpenOCD had a fork for picoprobe (using raw I imagine) it's rather dated (so likely not a solution as sdk too old)
I have definitely had Picoprobe running happily on a standard pico a few months ago without any changes to the source fetched from github, though it did take a moment to work out the right build options (I think the source supports three hardware configs - the retail probe, standard Pico with just wires, and another option with buffered signals that isn't the retail probe).
