I'm experiencing the same issue and want to further add some diagnostic info.
I did the exact same steps as original poster.
Things that caught my eye: the rpi5 gives no sound icon in the upper right corner.
Yet, if I switch the SD card to a rpi4, I get to see the sound icon in upper right corner.
If I than also switch the codec zero over to the rpi4 I can use it as expected (shows up in alsamixer, audio in/out works fine)
Could this be a fault in the devicetree blob? as this is the main thing switching from RPI5 to 4 (in software terms, not hardware, yet the GPIO header should be the same)
