It is clear that the special RPI desktop will get ruined at some point by going to testing. You can't get it installed like any other desktop for Linux with tasksel for example. That is why I don't use that DE, but I am a long term KDE user. IceWM as simple DE for admin task and Xfce for computers like Pi3B+ or similar non-Raspberries.The delta between upstream Debian and downstream Raspberry Pi OS is bigger than just the kernel - there seem to be various packages to adjust the configuration of the system, and the graphical desktop environment has custom elements too....But it is vanilla Debian for the rest, so same as x86_64 servers running Debian.

That Pi3B+ in the field has a server role, it has only a USB2serial cable as console for emergencies and I have tested the principle also on another Pi3B+, but then with Xfxe. I know which packages are 'risky'. On Pi4B+ or similar non-Raspberries I also use Opensuse Tumbleweed, is rolling release and mostly more cutting edge than Debian Testing, so I have 'pre-tested' Debian Testing already a bit usually. It is just a matter of not selecting packages or subsystems where RPT has done (downstream) patches/tweaks.
